Preheat the oven to 180°C (350°F).
Heat olive oil in a large oven-safe pot over medium heat.
Sear the pork shoulder until browned on all sides, about 5-7 minutes.
Remove the pork and set aside. Add chopped onions to the pot and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and cook for another minute until fragrant.
Layer sliced potatoes and carrots in the pot, followed by the seared pork.
Sprinkle bay leaves, thyme, salt, black pepper, and paprika over the layers.
Spread mustard on top of the pork.
Pour vegetable broth into the pot until it reaches the bottom layer, but does not cover the meat.
Cover the pot with a lid or aluminum foil.
Bake in the preheated oven for 2-2.5 hours until the meat is tender.
Remove from the oven and let rest for 10 minutes before serving.
