1/2 cup vegan cheese shreds
1/4 cup green onions, chopped
1/4 cup vegan sour cream
1/4 teaspoon smoked paprika

Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes thoroughly, then dry them with a towel.

Pierce each potato several times with a fork to allow steam to escape during baking.

Rub the potatoes with olive oil, salt, and black pepper.

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

Remove the potatoes from the oven and let them cool for a few minutes until they are manageable.

Once cool, cut each potato in half lengthwise and scoop out some of the flesh, leaving a small border around the edges.
