Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Wash and scrub the potatoes thoroughly.
  3. 3Slice the potatoes thinly using a mandoline or sharp knife.
  4. 4Pat the potato slices dry with a kitchen towel.
  5. 5In a large bowl, toss the potato slices with olive oil until evenly coated.

  • 4 large russet potatoes
  • 2 cups vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Instructions

  1. 1Peel the potatoes and cut them into thick strips.
  2. 2Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  3. 3Drain the potatoes and pat them dry with a clean towel.
  4. 4Heat the vegetable oil in a deep fryer or a large pot to 325°F (160°C).
  5. 5Fry the potatoes in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.
  6. 6Increase the oil temperature to 375°F (190°C).
  7. 7Fry the potatoes again in batches for 3-4 minutes until they are golden brown and crispy.
  8. 8Remove the fries from the oil and drain on paper towels again.
