Instructions

- 2Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
- 3Drain the potatoes and pat them dry with a clean towel.
- 4Heat the vegetable oil in a deep fryer or a large pot to 325°F (160°C).
- 5Fry the potatoes in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.
- 6Increase the oil temperature to 375°F (190°C).
- 7Fry the potatoes again in batches for 3-4 minutes until they are golden brown and crispy.
- 8Remove the fries from the oil and drain on paper towels again.
- 9Season the fries with salt, black pepper, garlic powder, and paprika while they are still hot.
- 10Serve immediately.

- 8Increase the oil temperature to 190°C (375°F). Fry the chips again in batches for about 3-4 minutes until they are golden brown and crispy. Drain on paper towels again.
- 9Season with sea salt to taste and serve hot.
