Dried herbs are often more affordable and have a longer shelf life.

Heat butter in a stainless steel frying pan until hot.

Add mushrooms to the pan, ensuring not to add anything else to allow moisture to come out of the mushrooms.

Season mushrooms with salt, crushed red pepper flakes, and black pepper.

Add sliced shallots to the pan.

If you don't have shallots, you can use regular sweet onion or red onion.

Add a couple of sprigs of thyme to the mixture.

Pour in cherry wine (or Madera) and let everything come together.
