Heat olive oil in a large pot over medium heat until shimmering.
Season rabbit pieces with salt and pepper, then brown in the pot, about 5-7 minutes per side.
Remove rabbit from pot and set aside.
Add onions, garlic, carrots, and celery to the pot; sauté until softened, about 5 minutes.
Stir in thyme and bay leaves, cooking for another minute until fragrant.
Deglaze the pot with white wine, scraping up any browned bits, and simmer for 2-3 minutes.
Return rabbit to the pot and add chicken broth and potatoes; bring to a boil.
Reduce heat to low, cover, and simmer for 1.5-2 hours until rabbit is tender.
Remove rabbit, shred the meat from the bones, and discard bones.
Return shredded meat to the pot, stir well, and adjust seasoning with salt and pepper.
Add lemon zest and chopped parsley before serving.
Serve hot with crusty bread or dumplings.
