Today, it is a beloved comfort food enjoyed in various forms across Europe, with modern variations incorporating different toppings and flavors.

Dissolve yeast in warm water, stir, and leave to activate.
In a bowl, add flour, salt, sugar, oil, and the yeast mixture.
Knead the dough by hand for 5 to 10 minutes or mix on low speed with a stand mixer until a smooth dough forms.
Once kneaded, place the dough in a bowl, cover it, and let it rise for 30 minutes.
Fry the lardons in a saucepan over medium heat until most of the fat is rendered out, being careful not to make them crispy.
Remove the lardons from the pan but keep the rendered fat to cook the onions.
Sauté the onions in the rendered fat over medium-high heat for about 5 to 7 minutes, then set aside to cool.
In a bowl, mix crème fraîche with nutmeg, adding a pinch of salt and ground pepper.
Preheat the pizza oven to around 300 degrees Celsius (570 degrees Fahrenheit).
Transfer the risen dough to a lightly floured surface and roll it out into a thin oval.
Spread 2 or 3 heaped tablespoons of the crème fraîche mixture evenly over the dough.
Add the cooked onions and lardons on top, and sprinkle with salt and pepper.
Optionally, add some scallions, leeks, or chives for greens.
Transfer the pizza to a lightly floured peel and launch it into the pizza oven.
Cook for 3 to 4 minutes, turning the flammkuchen every 20 seconds to ensure even cooking.
Once the edges are crispy and golden brown, remove the flammkuchen from the oven, slice, and serve immediately.
