Add the flour in a bowl, activate the yeast with 2 teaspoons of sugar till it turns liquid.

Add 1/2 cup of water, 1/3 cup of olive oil, 1 teaspoon of salt and the yeast to the flour.

Knead by hand for about 10 minutes and add another 2/3 cup of water till you have a bouncy strong dough.

Set the dough aside to rise till double in size (for at least an hour).

Split the risen dough in 4 pieces and roll with a thin long pin 3-4 wider than the pan you are using for your pie. Dust plenty of flour as you are rolling to avoid dough getting stuck.

If you let the filo sheets rest before using, make sure to cover them with a slightly moist towel to prevent them from drying out.
