Using clean hands, toss the potatoes to ensure they are well coated.
Place the coated potatoes on a baking sheet.
Roast the potatoes in the oven at 400°F for about 45 minutes to an hour.
Halfway through the cooking process, toss the potatoes to ensure they are evenly browned on all sides.
Optionally, add chopped cilantro before serving.
