In a large pot, add 200 gram orzo pasta and 700 milliliter vegetable stock.
Boil according to package instructions, about 7-8 minutes.
Drain the orzo and place it in a large bowl to cool completely.
In a jar, add 50 milliliter olive oil, 1 teaspoon salt, 1 teaspoon pepper, mixed with dried basil, and 3 tablespoons fresh squeezed lemon juice or vinegar.
Put the lid on the jar and shake well to mix the dressing.
Add 60 gram sliced olives, 50 gram grated carrot, 80 gram diced cucumber, and 80 sliced red bell pepper to the cooled orzo.
Add fresh chopped parsley, mixing gently to avoid squashing the tomato halves.
Add 100 gram diced feta cheese and the julienne sliced red onion to the bowl.
Mix all ingredients gently using vertical moves to combine without breaking the cheese.
