In a bowl, take 1 cup all purpose flour and add salt as per taste. Mix well.

Gradually add water to make a semi-soft dough. Optionally, add some maize flour (makhaka atta). Knead for 2 to 3 minutes.

Apply some oil to the dough, cover it, and let it rest for at least 5 to 10 minutes.

Heat a kadhai or pan and add 2 to 3 teaspoons of oil.

Add 1 teaspoon chopped or sliced garlic and 1 medium sized sliced onion. Saute for a few seconds.

Add 1/4 cup sliced tomato, 1/4 cup sliced capsicum, and 1/4 cup sweet corn. Stir for a few seconds without overcooking the vegetables.

Add a little salt as per taste, and 1/2 teaspoon red chilli powder. Mix in Italian herbs or any Indian masala of your choice.

After resting, knead the dough again for 15 to 20 seconds until smooth.

Divide the dough into three equal portions.

Sprinkle some maida on the countertop and roll one portion into a thin sheet like a roti.

Heat a tawa or griddle and cook the rolled tortilla on both sides for 10 to 15 seconds until it turns translucent. Do not cook completely.

Repeat the cooking process for the other tortillas.

To prepare the quesadilla, take one tortilla and sprinkle 1/2 cup mozzarella cheese on it.

Add the prepared vegetable stuffing and some more cheese on top.

Place 1 cheese slice or processed cheese on top, along with mixed herbs or chatpata masala and chili flakes.

Fold the tortilla in half and press with a spatula to keep it together.

Heat the tawa or griddle and add some oil or butter.

Cook the quesadilla on both sides until the cheese melts and the quesadilla has light brown spots.

Repeat the steps for the next quesadilla.
