Preheat the oven to 375°F (190°C).
Slice the courgettes and tomatoes into thin rounds.
Chop the onion and garlic finely.
Heat olive oil in a skillet over medium heat and sauté the onion until translucent, about 5 minutes.
Add garlic and cook for another minute until fragrant.
In a baking dish, layer the courgette slices and tomato slices alternately, overlapping them.
Spread the sautéed onion and garlic mixture evenly over the layered vegetables.
Season with salt, black pepper, thyme, and oregano to taste.
Sprinkle bread crumbs and grated parmesan cheese on top of the vegetables.
Drizzle a little olive oil over the top for extra crispiness.
Bake in the preheated oven for 30-35 minutes until golden and bubbly.
Remove from the oven and let cool for a few minutes before serving.
Garnish with fresh basil before serving.
