1

Heat pan on high, lightly grease with vegetable or grapeseed oil.

2

Whisk together flour and salt. Slowly add milk, whisking until smooth. Whisk in eggs.

3

Ladle 2 ladle fulls of batter into the pan, swirling until batter covers the bottom and up the sides of the pan in a thin layer.

4

Allow to cook until galette is dry and turning brown around edges. Flip the galette and cook for 1-2 mins more on the other side.

5

Slide galette out of the pan onto a cutting board. Place a layer of cheese shaped in a square design, then place ham on top.

6

Fold opposite horizontal sides over the middle to meet, then fold the other sides to form a square.

7

Lower heat on pan, place a pat of butter in the pan, and place galette in the pan to brown in the butter. Flip and allow the other side to brown and for the cheese to melt.

8

In a salad bowl, add mustard and vinegar, whisk to combine, then slowly add oil whisking until emulsified. Season with salt and pepper if desired. Toss with salad.

9

Place galette on plate and serve with salad on the side.
