Heat a pan over high heat and add 1 tablespoon of sesame oil.
Add 1 cup of fine chopped white onion and sauté until translucent.
Deglaze the pan with a little beer and 2 tablespoons of rice wine vinegar.
Add 2 pounds of extra lean halal chicken to the pan without moving it around to sear.
Add 1.5 ounces of ginger to the chicken and let it sear on both sides.
Once the chicken is seared, break it up slightly to cook through.
Add 1.5 ounces of soy sauce, 2 teaspoons of sambal oelek, and 1/2 cup of hoisin sauce to the chicken.
Mix everything together and add 1 cup of edamame beans and 3/4 ounces of chicken stock.
Let the mixture simmer for about 30 minutes until the liquid reduces.
Prepare a fresh topping by julienning 1 sugar snap pea, 1 carrot, and sweet bell peppers.
Rough chop cilantro and mix it with the julienned vegetables.
Squeeze the juice of 1 lime over the vegetable mixture and mix well.
Season the ginger chicken with salt and pepper and add fresh ginger at the end.
