Heat cow's milk in a large pot over medium heat until warm.

Add rennet and stir gently for a few seconds.

Let the milk sit undisturbed until curds form, about 30-60 minutes.

Cut the curds into small cubes and allow to rest for 5 minutes.

Gently stir the curds while heating to 105°F, about 10-15 minutes.

Drain the curds in a cheesecloth-lined colander, allowing whey to separate.

Transfer the curds to a mixing bowl and add salt to taste.

Mix in cream, black pepper, and minced garlic until well combined.

Pack the mixture into a mold or container, pressing down to remove air pockets.

Cover and refrigerate for at least 24 hours to set.

Unmold the cheese and drizzle with olive oil before serving.
