Mix Buckwheat Flour, Water, Egg, and Salt in a bowl.

Ladle about 4 oz of batter per Galette onto a nice, big pancake or crepe pan.

Cover the entire pan with the batter and let it set for a few seconds.

If desired, flip the Galette or start adding toppings.

For a Galette Complète, add an Egg and move the white around to cover the base of the Galette.

Add Cheese and Ham, then fold the corners in to make a square showing the egg yolk.

Cook for a few extra seconds to crisp the bottom before removing to a plate.

Top with snipped Chives and Black Pepper and serve.
