Homemade sauce can reduce sugar and preservatives.

Peel and cut potatoes into thin strips.

Soak the potato strips in cold water for at least 30 minutes.

Drain and pat the potatoes dry with a towel.

Heat vegetable oil in a deep fryer or large pot to 350°F.

Fry the potatoes in batches until golden brown, about 4-6 minutes.

Remove fries and drain on paper towels, then season with salt.

In a small bowl, combine ketchup, curry powder, onion powder, garlic powder, and black pepper to make the curry ketchup.

Serve fries hot with curry ketchup on the side.
