4 servings
Servings4
green seedless grapes
2 cups white granulated sugar
1/2 cup water
1/4 cup corn syrup
water for cleaning
1/2 tablespoon distilled white vinegar
water for candy thermometer
water for cooling candy mixture
water for rinsing grapes
flavoring (watermelon flavor)
gel food coloring (Rose Wilton)
liquid whitener
1

Remove grapes from the stem by twisting them off to avoid tearing the skin.

2

Place grapes in a colander and rinse under running water to remove dirt.

3

Submerge grapes in a bowl of water with 1/2 tablespoon of distilled white vinegar for about 10 minutes to clean.

4

Rinse grapes again in the colander and dry them with a napkin or paper towel to remove moisture.

5

Insert a toothpick into each grape where the stem was removed, being careful not to puncture through the grape.

6

In a pot, combine 2 cups of white granulated sugar, 1/2 cup of room temperature water, and 1/4 cup of corn syrup. Stir for 30 seconds to incorporate.

7

Attach a candy thermometer to the pot, ensuring it doesn't touch the bottom. Set the stove to medium heat (number 6).

8

Monitor the mixture for the first 10 minutes, then for the next 5 minutes as it begins to boil and the temperature rises.

9

When the temperature reaches 250°F, add flavoring and gel food coloring. Do not stir after adding these ingredients.

10

Continue heating the mixture until it reaches 300°F, watching for the bubbles to slow down.

11

Once it hits 300°F, remove the thermometer and place it in a bowl of water to prevent the candy from hardening on it.

12

Dip each grape into the candy mixture, swirl to coat, and shake off excess. Place on a silicone mat or parchment paper.

13

If the candy mixture starts to thicken, reheat it on the stove for about a minute to make it pliable again.

14

After all grapes are dipped, remove the toothpicks from the bottoms of the grapes.
