Ingredients

  • 1 cup brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1Cook the brown rice according to package instructions and set aside.
  2. 2In a large bowl, combine the black beans, corn, diced tomatoes, and cooked brown rice.
  3. 3In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and black pepper.
  4. 4Pour the dressing over the rice and bean mixture and toss to combine.
  5. 5Add the diced avocado and gently fold it into the mixture.
  6. 6Top with shredded cheese if using and sprinkle with chopped cilantro.
  7. 7Serve immediately or refrigerate for up to 2 days.

1 bag Beyond Meat steak tips
120g nonfat Greek yogurt
20g minced garlic
1 tbsp lemon juice
200g Beyond Meat ground
100g Caramelized onions

480g cauliflower rice
440g extra firm tofu
320g edamame
120g seaweed salad
60ml soy sauce
120g nonfat Greek yogurt
120g 1% cottage cheese
120g diced cucumber
20g pickled ginger

Cook the basmati rice according to package instructions.

In a bowl, combine the cottage cheese, Greek yogurt, light shredded cheese, shredded lettuce, pico de gallo, black beans, and Beyond Meat ground.

Season with salt, paprika, garlic powder, and a squeeze of lime. Add sriracha if desired.

For the shawarma bowl, cook the dry basmati rice and mix with diced red onion, diced tomato, and sliced lettuce.
