12 oz extra firm tofu (diced)
1 cup button mushrooms (sliced)
1 Roma tomato (diced)
1 cup red onion (chopped)
1 cup carrot (chopped)
2 celery stalks (chopped)
1 red pepper (diced)
5-6 garlic cloves (finely chopped)
1 cup fresh/frozen green peas
1.5 cup vegetable stock
1 tbsp cajun or old bay seasoning
1 tsp Worcestershire sauce
salt & pepper for taste

Pre-heat oven to 375 deg. F.

Place quinoa into a bowl. Rinse and clean the quinoa with your hand gently. Drain the water using a fine-mesh strainer. Repeat the process until the water is no longer murky.

Place the diced tofu into an oven pan. Drizzle 1 tbsp of vegetable oil and season with salt and pepper. Mix gently. Bake the tofu in the oven for 20 minutes.

In a hot skillet, add 2 Tbsp of vegetable oil.

Saute red onion.

Add carrots and celery and continue stirring.

Add red pepper and mushroom.

Add garlic.

Add cajun or old bay seasoning and continue stirring.

Add quinoa and stir for 1 minute.

Add broth and half of the diced tomato. Place the lid on the skillet and wait for 20 minutes.

Once the quinoa is cooked add the tofu.

Add Worcestershire sauce and season with salt and pepper.

Add green peas and mix gently.

Garnish with green onion, parsley and tomato.
