Slowly drizzle in olive oil while whisking to create a creamy dressing.
Add anchovy fillets and minced garlic to the dressing, whisking to combine.
Toss the grilled romaine with the dressing until well coated.
Top with croutons and shaved parmesan cheese before serving.
