1

Prepare the marinade with chili paste, minced onion, juice of 2 limes, minced garlic, and ginger.

2

Pour the marinade over the flank steak and let it sit in the fridge for 30 minutes to 3 hours.

3

Heat a grill pan on high.

4

Remove the onions and marinade from the surface of the steak.

5

Grill the flank steak, cooking it to no more than medium rare, flipping it after a few minutes.

6

In a pot, combine the marinade, lime juice, sugar, and a little water, cooking it down into a chili glaze.

7

Prepare the artichokes by cutting off the outer leaves, scooping out the choke, rubbing with lime, and cooking in acidulated water for about 25 minutes.

8

Assemble the salad with cooked artichokes, diced cucumber, radicchio, spring onion, coriander, and mint.

9

Slice the grilled flank steak across the grain into thin slices and fan it out over the salad.

10

Drizzle the chili glaze over the steak and salad, and top with deep fried shallots.
