Make bayou butter by mixing 1 stick of softened butter with 1 tablespoon of stone ground or creole mustard, 1 tablespoon of king craw cajun seasoning, and some parsley flakes. Roll it up in plastic wrap and refrigerate.
Drizzle olive oil on both sides of the ribeye steaks to help the seasoning stick.
Generously coat the ribeye steaks with king craw cajun seasoning, ensuring to cover the edges as well.
Let the seasoned ribeye steaks sit while preparing the grill.
Light the grill using royal oak all natural briquettes in a chimney with a tumbleweed underneath. Wait for about 15-20 minutes until the coals are hot.
Place the grill grate on the grill and spray it with cooking spray to prevent sticking.
Once the grill is at about 550 degrees, place the ribeye steaks on the hot grill and press them down to get a good sear.
Cook the steaks for 1.5 minutes, then twist them for crosshatch grill marks and cook for another 1.5 minutes.
After 3 minutes total, flip the steaks and press them down. Cook for another 1.5 minutes, then twist again for another 1.5 minutes.
Add a pat of bayou butter on top of each ribeye during the last minute of cooking.
After a total of 6-7 minutes, check for doneness; the steaks should be medium rare. Let them rest for 5-7 minutes, placing another pat of butter underneath them for dipping sauce.
Slice the steaks and drizzle any remaining pan butter over them before serving.
