Combine whole wheat flour, vital wheat gluten, and salt in a large bowl.
In a separate bowl, dissolve yeast and sugar in warm water until frothy.
Add the yeast mixture and olive oil to the flour mixture.
Mix until a dough forms, then knead on a floured surface until smooth, about 8-10 minutes.
Place the dough in an oiled bowl, cover with a damp cloth, and let rise until doubled, about 1 hour.
Preheat the oven to 475°F (245°C) with a baking stone or baking sheet inside.
Punch down the risen dough and divide it into equal pieces.
Shape each piece into a ball and roll out into circles about 1/4 inch thick.
Sprinkle cornmeal on the baking stone or sheet to prevent sticking.
Bake the pitas for 5-7 minutes until they puff up and are lightly browned.
Remove from the oven and cover with a towel to keep warm.
Allow to cool slightly before serving.
