Pecorino offers a similar flavor at a lower cost.

Put the squirrel in the crock-pot with chicken broth, garlic, salt, and pepper; cook on low all day.

Drain some of the liquid from the crock-pot.

Add 3 cloves of garlic, 1/2 onion, 3 tablespoons of tomato paste, 2 cans of diced tomatoes, 1 tablespoon of dried oregano, and 1 tablespoon of dried basil to the pot.

Stir the ingredients together and let it simmer for a couple of hours.

Shred the meat off the cooked squirrels and add it back into the pot.

Let the mixture cook for a minute while the pasta finishes.

Plate the dish and top it with Parmesan cheese.
