Combine water and active sourdough starter in a bowl.
Add flour, honey or sugar, salt, and olive oil to the bowl.
Mix the ingredients in a stand mixer fitted with a dough hook on medium low speed for 15 minutes.
Place the dough in a well-oiled bowl and allow to rise at room temperature until doubled, about 8-12 hours.
Shape the dough by stretching and folding it over itself several times, sealing the seams.
Place the shaped dough on a parchment-lined baking sheet and cover with a tea towel; let it rise until doubled, about 4-8 hours.
Score the dough with a razor blade or serrated knife.
Bake in a preheated oven at 450°F (232°C) for 25-30 minutes until deep golden brown.
Allow the bread to cool completely on a wire rack before slicing.
