Tawa Burger

2 tbsp butter
5-6 cloves garlic (chopped)
2-3 green chili (chopped)
½ capsicum (chopped)
2 onions (chopped)
salt (to season)
2 tomatoes (roughly chopped)
1 carrot (chopped, parboiled)
1 potato (chopped, parboiled)
4 french beans (chopped, parboiled)
100g paneer
5 cheese cubes / 125g processed cheese
2 tbsp coriander leaves (chopped)
2 tbsp sesame (for masala paste)
½ tsp coriander seeds (for masala paste)
½ tsp cumin seeds (for masala paste)
½ tsp kasoori methi (for masala paste)
1 tsp kashmiri red chili powder (heaped, for masala paste)
1 tsp amchoor powder / chat masala (heaped, for masala paste)
¼ tsp sugar (for masala paste)
1 tsp schezwan chutney (for masala paste)
2 tbsp butter (to finish)
1 tbsp leftover masala paste / schezwan chutney (to finish)
1 tbsp coriander leaves (to finish)

In a large tawa / kadhai, heat up the butter.

Add in garlic, green chili, onions, and capsicum.

Season well with salt, and cook until onions start getting golden.

In the meanwhile, make a spice paste using all the ingredients mentioned under masala paste and a little bit of water.

Add in the tomatoes to the tawa, along with the parboiled veggies and paneer.

Mash & cook the veggies until they come together and are cooked.

Add in all the masala paste and the cheese cubes and mix well.

Add some water to mellow the mixture down, and cook well. Finally, add some coriander leaves and keep the mixture aside.

Take a burger bun, and slice horizontally, ¾ way through. Fill the veggie mixture, and keep aside.

Heat up a pan, add in a tsp of butter, a touch of masala paste and a sprinkle of coriander leaves. Roast the burger on its’ sides and serve it up!
