Combine 4 cups of high-grade flour, 2 1/2 teaspoons of active dry yeast, and 2 teaspoons of coarse salt in a large bowl and mix well.
Pour in 1 1/2 cups of room temperature or slightly chilled water and stir until a ball of dough forms.
Cover the bowl lightly with plastic wrap and let the dough sit at room temperature for 2 to 3 hours until it almost doubles in size.
Sprinkle flour onto wax paper to prevent sticking and transfer the dough onto it.
Cut the dough in half and shape each half into loaves, adding extra flour as needed to manage stickiness.
Let the shaped loaves sit for about 45 minutes to rise slightly.
Sprinkle garlic powder on the bottom of a baking pan for added flavor and texture.
Transfer the loaves into the prepared baking pan.
Drizzle olive oil on top of the loaves and rub it in gently with your finger.
Use a sharp knife to make shallow scores on the top of the loaves, being careful not to cut all the way through.
Sprinkle sesame seeds on top of the loaves, spreading them out evenly.
Preheat the oven to 225°C (about 437°F).
Bake the loaves in the oven for about 20 to 30 minutes.
Check the hardness on top of the loaves by tapping with the back of a butter knife; it should sound solid.
