Lagana is a traditional Greek flatbread, typically enjoyed during Clean Monday, marking the start of Lent. This unleavened bread symbolizes the end of winter and the arrival of spring, often served with olives and taramasalata. While it has deep roots in Greek culture, variations of flatbreads can be found across the Mediterranean, adapting to local tastes and ingredients.

In a large bowl, add 4 cups of all-purpose flour and 1 and 1/2 teaspoons of salt, whisk together and set aside.
In a tabletop mixer, add 1 and 1/2 cups of lukewarm water, 2 teaspoons of granulated sugar, and 1 and 1/2 teaspoons of active dry yeast, mix and let sit for about 8 minutes until foamy.
Add 1/4 cup of olive oil to the yeast mixture, then add all the flour mixture and knead on low speed for about 10 minutes.
Transfer the dough to a greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise until doubled in volume.
Cut the risen dough into two equal portions, roll each portion into a rectangle or oval shape about 9 by 13 inches.
Place the rolled dough onto trays lined with parchment paper, cover loosely with a kitchen towel, and let rest for 30-40 minutes until puffed up.
Press into the dough with fingertips to create a pinched look, brush with water, and sprinkle with sesame seeds or everything bagel seasoning.
Bake in a preheated oven at 425ยฐF for about 15 minutes until golden brown.
Let the bread rest for 8-10 minutes before serving.
