Cut green onions, separating the white part for mixing and the green part for garnish.
Dice half a bell pepper into small pieces.
Peel and dice celery, optionally peeling the outside first.
Grate half of a large carrot.
Cook 5 rashers of bacon until crispy, then set aside on paper towels.
Boil a pot of water with 2 tablespoons of salt and cook 1/2 pound of gluten-free macaroni until fully cooked but not falling apart.
Drain the pasta and rinse under cool water to stop the cooking process and prevent sticking.
In a bowl, mix together 1/2 cup mayonnaise, 1/4 cup sour cream, 2 teaspoons yellow mustard, 1 tablespoon sugar, 1 tablespoon white vinegar, ground black pepper, and paprika.
Combine the cooked pasta with the chopped vegetables and bacon in a large bowl.
Pour the dressing over the pasta mixture and fold gently to combine without breaking the pasta.
Taste and adjust seasoning, adding salt if necessary, then serve family style topped with reserved green onions.
