Mention that the recipe makes about 2 cups of jam, filling two 8-ounce jars.
Start with 16 ounces (1 pound) of strawberries, can also use other low-carb berries.
Pre-macerate the strawberries in a food processor for texture.
Transfer the mixture into a saucepan.
Add 1/2 cup of water and 1/2 cup of natural sweetener to the saucepan with the fruit.
Stir to combine and heat on low simmer for 15-20 minutes to release pectin and combine sweetener.
Add a couple of squeezes of liquid sweetener to offset cooling effect of erythritol.
Bloom the gelatin by mixing 2 tablespoons of lemon juice with 2 teaspoons of unflavored gelatin.
Stir the gelatin into the lemon juice until fully dissolved and let it sit to thicken.
After 15-20 minutes, remove the fruit mixture from heat and add chunks of bloomed gelatin.
Stir well to combine the gelatin into the warm fruit mixture.
Let the mixture sit on a cool burner for a few minutes to cool down.
Pour the jam into jelly jars and refrigerate.
Let the jam set for 4-6 hours or overnight before serving.
