Peel the carrots using a potato peeler and wash them.
Slice the carrots on an angle into uniform pieces, making the tip slices larger and the fatter part slices smaller for even cooking.
Peel fresh ginger using a potato peeler or the back of a spoon, wash it, and chop it finely.
In a frying pan over medium-low heat, melt 1 stick of butter and add chopped ginger and brown sugar, cooking for 3-4 minutes.
Add the sliced carrots to the pan and stir well.
Season with pink himalayan salt, black pepper, and a pinch of cayenne pepper.
Add a sprinkle of cinnamon toast crunch seasoning or cinnamon, and ground thyme if fresh thyme is unavailable.
Pour in bourbon and stir, allowing the alcohol to cook off for about 5 minutes.
Add honey to the carrots and reduce heat to low, simmering for 5-6 minutes until fork tender but not mushy.
Transfer the carrots to the oven and boil for 3-4 minutes until they have a charred look.
