Cut the onions into about quarter inch slices and separate the rings.
Remove the membrane from the inside of the rings if desired to help the batter stick better.
In a bowl, combine 1 cup of all-purpose flour, a bit of cornstarch, 1 teaspoon of salt, 1-2 teaspoons of ground black pepper, and 1/4 teaspoon of cayenne pepper (optional).
Whisk the dry ingredients until well combined.
Add about 2.5 cups of cold sparkling water to the flour mixture and whisk until combined, adjusting with more flour or sparkling water to achieve the right batter consistency.
Dip the onion rings into the flour mixture, coating them on all sides.
Then dip the coated rings into the batter mixture, ensuring they are completely coated.
Dredge the battered rings in Panko bread crumbs until fully coated and set aside on a wire rack.
Heat vegetable oil to 350°F (180°C) for frying.
Fry the onion rings in the hot oil, turning occasionally until they are a beautiful golden brown, checking for doneness visually.
Remove the fried onion rings using tongs and set them aside on a wire rack to drain excess oil.
