Peel the potatoes and cut them into small, uniform pieces.
Place the potatoes on a plate and add 2 tablespoons of water and 1 tablespoon of olive oil on top.
Cover the potatoes with plastic wrap and microwave for 15 minutes, making holes in the surface to prevent them from exploding.
While the potatoes are cooking, cut the frankfurt into small pieces and place them in a skillet to brown.
Add chopped onion to the skillet and continue to brown.
Season with salt, pepper, and a little parsley while cooking.
Once the potatoes are cooked, carefully remove them from the microwave and let them cool until they reach room temperature.
Once the potatoes are cool, add salt and the previously made sauté mixture and mix well.
Then add the sauce made from mixing 2 tablespoons of mayonnaise and 1 tablespoon of mustard until uniform.
The salad is ready to be served and enjoyed.
