Add 3 medium sized tomatillos, 2 jalapeños, half an onion, and 2 cloves of garlic to a dry cast iron pan over medium heat.

Char the vegetables on all sides, flipping every so often until the skin has blackened and the veggies are cooked through, roughly 20 minutes.

Keep the garlic furthest away from the center of the pan to prevent it from getting too dark.

Remove the charred vegetables from the heat and trim off the root of the onion and the stems of the peppers.

Add the charred vegetables to a blender and blend until broken up but still a little chunky.
