1

Start by dicing 1 and 1/4 cups of red and green bell peppers.

2

Mince 5 cloves of garlic.

3

Combine 1/2 cup of sugar with powdered pectin in a bowl to prevent clumping.

4

In a saucepan, add the minced peppers, minced garlic, and 1 cup of vinegar.

5

Add 2 teaspoons of prepared calcium water to the saucepan and stir to combine.

6

Heat the mixture over medium heat until it comes to a boil.

7

Once boiling, add the sugar and pectin mixture and stir vigorously for 2 minutes.

8

After 2 minutes, add the remaining 1 cup of sugar and stir until completely dissolved.

9

Bring the mixture back to a boil, then turn off the heat.

10

Prepare jars by washing them in hot soapy water and drying them on a towel.

11

Ladle the hot jelly into the jars, leaving 1/4 inch headspace.

12

Run a utensil around the inside of the jar to remove air bubbles.

13

Wipe the rim of the jar with a damp towel to ensure a good seal.

14

Place the lids on the jars and tighten the bands to fingertip tight.

15

Process the jars in a steam canner for 10 minutes or in a hot water bath canner until boiling.

16

After processing, let the jars sit undisturbed for 12 hours to seal.
