Prepare the casing by rinsing and soaking in water.
Mix the pork and beef in a large bowl.
Add salt, black pepper, marjoram, thyme, nutmeg, and sugar to the meat mixture.
Finely chop onion and garlic, then add to the mixture.
Mix thoroughly until well combined and sticky.
Stuff the mixture into the prepared casing using a sausage stuffer.
Twist sausages into 6-inch links and tie off the ends.
Prick each sausage with a needle to release air bubbles.
Refrigerate sausages for at least 24 hours to develop flavor.
Preheat grill or skillet over medium heat.
Cook sausages for 10-12 minutes, turning frequently until browned and cooked through.
Serve hot with mustard and bread.
