Add 3 liters of water to a large pot.

Once the water starts to boil, add the chopped meat in equal parts.

Cover the pot and let it cook over medium heat for 20 minutes.

Add the wheat that has been washed and soaked overnight.

Cover the pot and cook over low heat for 30 minutes.

Chop the vegetables: cut the leek in half and then into thin slices; cut the celery into thin slices between 2 and 3 millimeters thick; peel the pumpkin and cut it into sticks approximately 1 centimeter thick; peel the carrot, cut it in half and into sticks approximately 1 centimeter thick; peel the potatoes and cut them into 4 equal parts.

After 50 minutes of cooking, add a sprig of fresh oregano and the potato.

Cover the pot and continue cooking for 8 more minutes.

Add the chopped vegetables and stir them well.

Add a pinch of salt to taste and stir to dissolve completely.

Continue cooking for 10 more minutes.

Turn off the stove and stir carefully until well integrated.

Serve hot in a deep plate and sprinkle with coriander and finely chopped fresh parsley.
