Platano Macho Frito, or fried plantains, is a beloved dish across Latin America and the Caribbean. This dish highlights the versatility of plantains, which are starchy and slightly sweet, making them perfect for frying. Traditionally served as a side or snack, they are often enjoyed with dips or as part of larger meals. Today, variations can be found globally, with each region adding its own flair, from spices to sauces.

Zucchini offers a similar texture when fried.

Vegetable oil is often less expensive.
Cut off the ends of the green plantains and set them aside.
Slice the plantains open using the outer part of your hand to peel them off without using your nails.
Cut the peeled plantains into medium-sized pieces.
Heat vegetable oil until nice and hot in a large skillet.
Add the sliced plantains to the hot oil for pre-frying until they are a nice golden color.
Remove the pre-fried plantains and place them in a separate pan to cool.
Prepare a salt water mixture by adding kosher salt to water and optionally adding a drop of sour orange juice.
Press down gently on the plantains using the skin to flatten them, then place them in the salt water mixture.
Once all plantains are flattened, add them back into the hot oil to fry until crispy and brown, flipping them every minute to avoid burning.
Remove the fried plantains from the oil and place them on napkins to drain excess oil.
Serve the fried plantains with optional pico de gallo on top or alongside any fried food.
