1

Grate 2 pieces of fresh ginger along with the peel using a small grater.

2

Extract the juice from the grated ginger using a clean muslin cloth or by pressing it with your hands until all the juice flows out.

3

In a pan, add 1 cup of water and 1/2 cup of jaggery, cooking it until the jaggery melts completely and forms a light syrup.

4

Add the ginger juice to the melted jaggery syrup and cook for a few seconds to remove the rawness.

5

Add 1/2 teaspoon turmeric and 1/4 teaspoon plain salt to the mixture and cook until it comes to a boil, stirring occasionally.

6

Turn off the heat once the mixture thickens slightly and becomes sticky, then transfer it to a large bowl to cool completely.

7

In another pan, dry roast 1 tablespoon of ground black pepper, 1 teaspoon of cloves, and a small piece of cinnamon over low heat for about 1 minute until they release a pleasant aroma.

8

Grind the roasted spices into a powder using a stovetop grinder or mixer jar.

9

Once the jaggery mixture has cooled, add 1 tablespoon of the ground spice powder and mix well until combined.

10

Finally, add 5 tablespoons of honey to the mixture only after it has cooled down completely, and mix until smooth.
