Fermented Salsa

4 medium tomatoes, chopped
1 medium onion, finely chopped
2 cloves garlic, minced
1 jalapeño pepper, finely chopped
1/2 cup fresh cilantro, chopped
1 tsp salt
1/2 tsp black pepper
1/4 cup lime juice
1/4 cup water
1/4 cup whey (or additional water for vegan option)

In a large mixing bowl, combine the chopped tomatoes, onion, garlic, jalapeño, and cilantro.

Add the salt and black pepper to the mixture and stir well to combine.

In a separate bowl, mix the lime juice and water (and whey if using) together.

Pour the lime juice mixture over the vegetable mixture and stir until everything is well coated.

Transfer the salsa to a clean glass jar, pressing down to remove air bubbles and leaving about 1 inch of headspace at the top.

Cover the jar with a lid, but do not seal it tightly to allow gases to escape during fermentation.

Leave the jar at room temperature for 2-3 days, tasting daily until it reaches your desired level of fermentation.

Once fermented, store the salsa in the refrigerator to slow down the fermentation process.
