Quinoa Fruit Salad

1 cup quinoa
2 cups water
1 cup strawberries, chopped
1 cup blueberries
1 cup kiwi, peeled and diced
1 cup mango, diced
1/4 cup fresh mint leaves, chopped
1/4 cup honey or maple syrup
1 lime, juiced
1/4 tsp salt

Rinse the quinoa under cold water to remove any bitterness.

In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.

Remove from heat and let it sit covered for 5 minutes, then fluff with a fork and let it cool.

In a large bowl, combine the chopped strawberries, blueberries, kiwi, mango, and mint leaves.

In a small bowl, whisk together the honey (or maple syrup), lime juice, and salt.

Add the cooled quinoa to the fruit mixture and pour the dressing over it. Toss gently to combine.

Serve immediately or refrigerate for up to 2 hours before serving.
