Preheat the oven to 400°F.
Prepare a large cookie sheet by lining it with foil and oiling it.
Cut off the ends of the zucchini and cut them in half.
Deseed the zucchini using a spoon, being careful not to remove too much flesh.
Cut the deseeded zucchini into fry strips.
In a bowl, add 1 teaspoon of sea salt, 1/2 tablespoon of onion powder, 1 tablespoon of oregano, and cayenne pepper to taste.
Add 1 tablespoon of oil to the zucchini and toss to coat.
Let the zucchini sit for a bit to soak in the seasonings.
In another bowl, add about 1 cup of spelt flour and season it with 1 teaspoon of sea salt, 1/2 tablespoon of onion powder, 1 tablespoon of oregano, and cayenne pepper to taste.
Mix the flour and seasonings together until well combined.
Coat the zucchini strips in the seasoned spelt flour, shaking off any excess flour as you go.
Arrange the coated zucchini fries on the prepared cookie sheet, placing them close together but not overlapping.
Drizzle a little oil over the zucchini fries before baking.
Bake in the preheated oven until golden and crispy, checking for doneness.
