Cut 3 potatoes into clean, uniform pieces.

Transfer the cut potatoes to a pan and add water until covered.

Cook the potatoes for 5 minutes.

Drain the potatoes using a sieve and transfer them to a bowl.

Mash the potatoes into a puree.

Add chives, mozzarella cheese, garlic powder, salt, and black pepper to the puree and mix well.

Add 5 tablespoons of starch to the mixture and mix again for consistency.

Dust a board with cornstarch and place the potato dough on it.

Mold the dough into a rectangle using a loaf.

Cut the dough with a baker's spatula to form chips.

In a pan heated with boiling oil, add the potato chips slowly.

Fry the chips until golden, turning them to ensure even cooking.
