Preheat the oven to 400°F (200°C).
Clean the whole white fish and place it on a baking tray.
Chop 1 onion, 1 carrot, and 1 potato into small pieces and scatter them around the fish on the tray.
Drizzle 2 tablespoons of olive oil over the fish and vegetables.
Season the fish with salt and pepper to taste.
Chop a handful of parsley, 2 cloves of garlic, and a few sprigs of rosemary, then sprinkle them over the fish.
Slice 1 lemon and place the slices on top of the fish.
Bake in the preheated oven for 20 minutes until the fish is cooked through and flakes easily.
