How to make BAKED FISH (Holiday Special) by Kelly Henry

Soak the fish in salt water and lime.

Cut the onion into onion rings.

Julienne the sweet peppers.

Slice the potato into thin slices.

Rinse off the fish to remove excess salt and lime.

Season the fish by placing a sliver of beijing seasoning between each steak and marinate for about 15 minutes.

Grease a baking pan.

Make a bed in the pan with the sliced potatoes, onion rings, and sweet peppers.

Place the seasoned fish on top of the bed of vegetables.

Add a bit of the ketchup and barbecue sauce mixture over the fish.

Dust the fish with paprika, curry, and all-purpose seasoning.

Cover the pan and refrigerate until ready to bake.

Bake the fish in the oven for about 20 to 25 minutes, one hour before serving.

Add chopped garlic and additional seasonings over the top of the fish before baking.

Serve with lime wedges.
