Spanish Cauliflower Rice

1 medium head of cauliflower
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 bell pepper, diced
1 can (14 oz) diced tomatoes
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley, chopped

Remove the leaves and stem from the cauliflower and cut it into florets.

Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.

In a large skillet, heat the olive oil over medium heat.

Add the diced onion and sauté for about 3-4 minutes until translucent.

Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes.

Add the diced tomatoes (with juice), smoked paprika, cumin, salt, and black pepper to the skillet. Stir well to combine.
