Spanish Cauliflower Rice

4 cups riced cauliflower
olive oil

Heat olive oil in a large skillet over medium heat.

Saute onions for about three minutes until softened.

Add garlic and cook for about a minute until fragrant.

Add riced cauliflower and mix with the veggies.

Add cumin, smoked paprika, and salt, and stir well.

Cook for about four to five minutes until the cauliflower rice is soft.

Add tomato paste and a little bit of water to dissolve it.

Cook until the cauliflower rice absorbs the tomato flavors.

Turn off the heat and squeeze fresh lime juice over the top.
