Apple cider vinegar offers a tangy flavor while white vinegar is more economical.

Preheat oven to 250°F and fill a Le Creuset Braiser or shallow baking dish with tomatoes placed in roughly a single layer.

Add a head of garlic (crushed), a few sprigs of herbs (basil and/or thyme work well), and a generous pinch of sea salt.

Drizzle with olive oil until the ingredients are a little more than halfway covered, and stir to combine.

Roast for 1.5-2 hours, shaking the pan once or twice, until the tomatoes are wrinkled but not all burst.

Remove from the oven, allow to cool, and place the tomatoes and olive oil in a jar with an airtight lid.
