Sweet and Sour Caramelized Onions

Sweet and sour caramelized onions are a delightful American side dish that balances the rich sweetness of caramelized onions with tangy vinegar. Traditionally used to enhance burgers, sandwiches, or as a topping for meats, this dish showcases the versatility of onions. Today, variations can be found in many cuisines, reflecting local flavors and preferences.

balsamic vinegar

Apple cider vinegar provides a similar tangy flavor.
Peel and slice the onions in half.
Remove the core or root side of the onions and discard it.
Place the core side away from you and slice the onions very thin.
Heat a skillet on high heat and add the butter; let it melt slowly.
Add the sliced onions to the skillet.
Sauté the onions for about 15-20 minutes until they are totally soft and melted, stirring regularly for uniform coloring.
Once the onions are well colored and cooked, add the brown sugar and mix well to allow it to melt down.
Cook the onions with the sugar for about another 5 minutes, seasoning with salt and freshly ground peppercorns.
Deglaze the pan with red wine vinegar and allow it to reduce.
Once the onions are nicely golden brown, turn off the heat and transfer them into a bowl to cool down before using.
