Add 1 packet of yeast and 2 tablespoons of honey to a mixer.
Pour in 3/4 cup of warm milk and stir gently.
Let the yeast mixture rise for 5 to 10 minutes until bubbly.
Add 3 eggs to the yeast mixture and mix with a dough hook.
Incorporate 1 teaspoon of salt and 3 and 1/2 cups of flour, adding more if needed.
Knead the dough for 4 to 5 minutes until combined, scraping down the sides as necessary.
Remove the dough from the mixer; it should be slightly sticky but manageable.
Grease a bowl with olive oil, place the dough inside, cover with a tea towel, and let rise for 1 hour.
If in a colder environment, preheat the oven to 100 degrees Fahrenheit, turn it off, and place the dough inside to rise.
Prepare the cheese herb mixture by grating 2 cups of cheese (1 cup normal cheddar, 1 cup white cheddar, 1 cup mozzarella, 1/4 cup parmesan, and 1/3 cup pepper jack).
Add 2 cloves of garlic (finely chopped or pressed) and 1/3 cup of fresh herbs to the cheese mixture and combine.
Set the cheese mixture aside until the dough has risen.
After 1 hour, punch down the risen dough and transfer it to a floured cutting board.
Roll the dough out into a rectangle.
Spread the cheese mixture evenly over the dough.
Roll the dough up and pinch the seam shut.
Cut the rolled dough down the middle, keeping one end intact.
Flip the cheese side upwards and twist the two halves together to braid.
Transfer the braided dough to a pan for a final rise of 15 minutes in a warm environment.
Preheat the oven to 350 degrees Fahrenheit.
Bake the bread for 30 to 35 minutes until golden brown.
Remove from the oven and let cool slightly before serving.
